For the soup
  1. 60 g white onions, thinly sliced
  2. 4 garlic cloves, peeled and thinly sliced
  3. 350ml red wine
  4. 75ml balsamic vinegar
  5. 30ml brandy
  6. 850ml hot beef stock
  7. 25g butter mixed with 1 garlic clove
  8. 2g salt
  9. 2g freshly ground black pepper
For the gruyere toasties
  1. 2 white bread slices
  2. 50g Gruyere cheese, thickly sliced
  3. 30g butter
Instructions
  1. For the soup, melt butter in a large heavy-bottomed pan over medium flame and throw in the onions. Sauté for 20 minutes, stirring often, until they caramelise and stir in the garlic. Stir fry for another couple of minutes or until the mixture turns fragrant. Deglaze the pan with wine and brandy followed by a splash of vinegar. Pour in the stock, stir and bring it to a simmer. Continue to cook likewise, uncovered, for 15 minutes or until the onions turn very soft.
  2. For the toasties, spread a small knob of garlic butter on one side of each bread slice and sandwich a Gruyere cheese slice between two non-buttered sides of bread. Melt rest of the butter in a skillet over medium-high flame until it foams and place the sandwiches on the skillet. Fry each side for 5 minutes or until the toastie turns golden brown and the cheese melts completely. Slice the toastie into quarters and set aside.
  3. Taste the soup and adjust its seasonings. Ladle it into warm soup bowls and place a toastie quarter on top.
  4. Serve warm.
