For the croquettes
  1. 1 lb firm tofu, washed and drained
  2. 2 carrots, grated
  3. 1 onion, chopped
  4. 1 celery stick, chopped
  5. 7g sesame seeds, roasted
  6. 1g mixed dried herbs
  7. Salt and freshly ground black pepper to taste
  8. 15g whole-meal breadcrumbs
  9. Vegetable oil, for frying
  10. Soy sauce, as required
For the cranberry sauce
  1. 115g fresh cranberries
  2. 1 large onion, chopped
  3. 140ml orange juice
  4. 30g vegan margarine
  5. 140ml water
  1. For the croquettes, crumble the tofu into a large bowl and throw in the chopped vegetables. Sprinkle the breadcrumbs, sesame seeds, salt, ground pepper as well as dried herbs on top and splash in little soy sauce. Work them together with your hands to form a soft dough and split it into 8 small portions. Roll each of them into a small ball and press gently between your palms to flatten them slightly.
  2. Heat oil in a skillet and lower the croquettes into it a few at a time. Shallow fry one side for several minutes and flip them over carefully to fry the other side in a similar fashion.
  3. Lay them out in a small oven-safe casserole dish, side by side, and place in the oven. Set the oven to its minimum temperature and keep the croquettes warm in it.
  4. For the sauce, add a knob of margarine into a separate saucepan and melt it over medium heat. Add in the chopped onion and sauté briskly before putting the lid on. Sweat the onions over slow flame for another 10 minutes and dust with flour.
  5. Stir them together and cook for a minute then pour in the orange juice as well as water and bring the sauce to a boil. Toss the cranberries into it and bring the sauce to a simmer for 15 minutes over a gentle flame until the cranberries turn mushy and the sauce attains a thicker consistency; adjust the seasonings if necessary.
  6. Arrange the warm tofu croquettes on a serving platter and serve alongside a small jug of cranberry sauce.
