Ingredients
  1. 1 whole chicken, weighing 2 ½ - 4 lb
  2. 2 (15 g each) lemongrass sticks
  3. 3oz (25 g) spring onions
  4. 50g fresh ginger root, peeled
  5. 50g medium green chili
  6. 100g medium red chilies
  7. 100g medium yellow chilies
  8. 7g ground turmeric
  9. 7oz groundnut oil
Instructions
  1. Preheat your oven to 180 degrees C. Add all the ingredients, except the chicken, into a food processor and pulse into a smooth paste. Rub this spice blend all over the chicken and wrap it loosely with a piece of foil.
  2. Place in the hot oven to roast for 70-80 minutes or until the juices ooze out and the skin turns crispy; peel off the foil hallway through roasting.
  3. Test the chicken with a fork to check it is done and remove from the oven. Place a piece of foil on top to cover loosely and let the roasted chicken stand for 15 minutes to cool slightly.
  4. Slice and serve warm with roasted vegetables.
