Ingredients
  1. 175g prawns, peeled, deveined and cooked
  2. 100g broad beans
  3. 300g baby new potatoes, unpeeled
  4. 30g rocket leaves
  5. 15ml olive oil
  6. 15ml fresh lemon juice
  7. Salt and freshly ground black pepper to taste
Instructions
  1. Fill a large saucepan with water and stir in generous amount of salt. Bring the salted water to a boil and drop in the potatoes. Boil for 15-20 minutes or until they turn fork-tender and throw in the broad beans 2 minutes prior to cooking.
  2. Simmer for the remaining cooking time until the beans are just cooked yet retains the crunch and bright green color. Drain out the veggies into a colander and set aside until they cool down.
  3. Meanwhile, place the prawns in a medium-mixing bowl. Add a splash of lemon juice followed by a drizzling of olive oil and sprinkle a dash of seasonings add them all together until well coated with the dressing and add the cooked vegetables. Add the rocket leaves and toss once more to mix thoroughly.
  4. Serve right away.
