  1. 170g plain flour
  2. 4g baking powder
  3. 2g baking soda
  4. 1g salt
  5. 1.5g ground cinnamon
  6. 2 small eggs
  7. 85ml cooking oil
  8. 30g soft butter
  9. 85g icing sugar
  10. 85g soft brown sugar
  11. 110g cream cheese, softened
  12. 30g walnuts, finely chopped
  13. 15g chopped nuts, to garnish
  14. 85g grated carrots
  15. 1 ripe banana, peeled and mashed
  1. Stir the baking powder and soda into the flour in addition to a pinch of salt and sift the mixture into a medium bowl. Sprinkle the chopped walnuts and sugar into the mixture followed by a pinch of ground cinnamon.
  2. Crack the eggs and sprinkle the grated carrots over them. Add the mashed bananas and beat them together with an electric handheld mixer at medium high speed. Pour the oil in a thin, steady stream until it blends thoroughly into the above mixture to create a uniform, slightly runny mixture.
  3. Grease an 8’’ square cake pan and line it with a piece of baking parchment. Pour the mixture into the prepared pan and spread evenly with a spatula. Place the pan into the center rack of a preheated oven and bake at 180 degrees C for 40 minutes until the mixture is baked through and puffs up into a fluffy cake. Remove from the oven and let it cool slightly in the pan before turning it out onto a wire rack to cool completely.
  4. For the frosting, beat the butter and icing sugar into the softened cream cheese until mixed thoroughly. Slice the cake crosswise into two equal halves and coat the surface of the lower half with half of the prepared frosting. Place the upper half of the cake on top and frost its surface with the remaining mixture. Scatter the nuts on top to decorate and cut out thick wedges.
