Ingredients
  1. 2 ( approx. 180 g each) duck breasts, skin on
  2. 250g cherry tomatoes, halved
  3. 100g salad greens of your choice
  4. 11 g spring onion, diagonally sliced
  5. Salt to taste
For the dressing
  1. 1 garlic clove, peeled and grated
  2. 30ml soy sauce
  3. 8g grated ginger
  4. 45ml honey
Instructions
  1. Warm up your oven to 200 degrees C. Carve out shallow criss-cross patterns on the duck’s skin and rub a dash of salt all over them.
  2. Heat a non-stick griddle pan over high flame and lay out the duck breasts with the scored-side facing down. Cook each side for 4 minutes or until the skin turns crispy and the underside browns then transfer them onto a baking dish and set aside.
  3. Meanwhile, place the dressing ingredients in a small bowl and whisk to mix well, reserve 2 tbsp of the prepared dressing and drizzle rest of it over the meat.
  4. Place the meat in hot oven and roast for 10 minutes for medium-rare doneness. Take out the baking dish from oven and set aside briefly for 4-5 minutes or until the duck is cool enough to touch. Transfer the duck breasts onto chopping board and carve out thin slices.
  5. Add the duck slices into a bowl and add rest of the salad ingredients. Pour the reserved dressing on top and toss to mix thoroughly.
  6. Pile up equal amounts of salad onto individual plates and serve immediately.
