Ingredients
  1. 20 (85 g each) chicken thighs, skin and bones intact
  2. 120ml maple syrup
  3. 250ml apple juice
  4. 30ml soy sauce
  5. 30ml vegetable oil
  6. 12 g garlic cloves, unpeeled
  7. 1 cinnamon stick, broken into halves
  8. 2 star anises
Instructions
  1. Divide the chicken thighs among two re-sealable plastic bags and add in rest of the ingredients. Squeeze the ingredients together to crush them and seal the bag. Turn them over several times to coat well with the marinade and refrigerate overnight to marinate.
  2. Remove the bag from the fridge and bring the meat back to room temperature. Meanwhile, preheat your oven to 200 degrees C.
  3. Empty the contents of the plastic bag into a large roasting pan and roast in the oven for 1½ hours or until they turn glossy and deep brown.
  4. Serve warm.
  5. Tip: Swap the apple juice for orange juice to give it an orange-maple glazed twist.
