Asian Crispy Beef

Perfect for an Asian inspired dinner party
For the beef
  1. 500g beef fillet, thinly sliced
  2. Cornflour as required
  3. Groundnut oil, for deep frying
For the marinade
  1. 2 eggs, beaten
  2. 10g fresh ginger root, peeled and sliced into strips
  3. 9 g sesame seeds
  4. 5ml rice wine
  5. 15ml fish sauce
  6. 15ml sesame oil
  7. 5g palm sugar
  8. 3g freshly ground black pepper
To serve
  1. 30g basil leaves
  2. 20ml balsamic vinegar
  3. 15ml olive oil
  4. Salt and freshly ground black pepper to taste
  1. Combine all the marinade ingredients in a large bowl and put in the beef strips. Toss to coat well and set aside overnight, covered, to marinate.
  2. For the beef, pour in enough oil in a deep-based skillet so that it stands a couple of inches from the base. Heat it over moderately high flame until it sizzles.
  3. Spread the cornflour in a shallow dish and drain the beef strips onto it. Toss to dredge well and shake off any excess before lowering them into the hot oil.
  4. Deep fry the beef strips until they crisp up and turn golden brown and drain them out into a paper towel-lined plate. Frying them in batches would be a good idea to avoid overcrowding.
  5. Place the basil leaves in a bowl and throw in the crispy beef strips. Drizzle a good dash of balsamic vinegar as well as olive oil followed by a sprinkling of salt and toss to mix well.
  6. Pile them up on individual plates and serve right away.
